What's the best shutter speed to photograph hummingbirds? What camera setting is best as well?

As fast as possible! I tell my wife to use the "sports" setting, since that setting is designed to stop fast motion and should not flash. You can force the camera to go to the highest shutter speed and see how the pics turn out. You still probably won't stop action their wings, but you should get good shots.
